1/2 a Zucchini, grated
1 T Pumpkin seeds
1 T Preen herb of your choice (e.g. basil, coriander, chives)
Drizzle of olive oil
Salt and pepper
1/4 an Avocado, cubed
OPTIONAL EXTRAS: cooked bacon, extra vegetables
In a large mixing bowl combine the grated zucchini, lemon juice, pumpkin seeds, herbs, salt and pepper and a drizzle of olive oil and stir to combine. Add to your serving bowl.
Meanwhile cook your egg to your method.
Serve with the zucchini as your base, add your egg on top and then add your cubed avocado.
Voila - ready to eat!
