Ingredients:
1 cauliflower head, stalk removed and cut into large chunks Handful of cherry tomatoes, diced 1 red onion, diced Bunch of parsley, chopped 1 lebanese cucumber, cubed 1 garlic clove, crushed Juice and zest of 1 lemon 1 T tahini Salt and pepper to taste 1 - 2 T capers, totally optional Method: In a food processor/thermomix/blender pulse the cauliflower chunks until it resembles rice. Simply add to a large bowl with all other ingredients and toss until the flavours have combined and serve! This lasts 3 + days in the fridge and is fabulous as a side dish or on it's own as a light meal
