1 cauliflower head, stalk removed and cut into large chunks
Handful of cherry tomatoes, diced
1 red onion, diced
Bunch of parsley, chopped
1 lebanese cucumber, cubed
1 - 2 T capers, totally optional
Dressing:
1 garlic clove, crushed
Juice and zest of 1 lemon
1 T tahini
Salt and pepper to taste
+ protein of choice boiled eggs, canned tuna, tofu/tempeh, chicken, fish, beef, quinoa, nuts and seeds
Method:
In a food processor/thermomix/blender pulse the cauliflower chunks until it resembles rice.
Add to a large bowl with the tomatoes, onion, parsley, cucumber and capers if using.
Mix the dressing together, adding water if it needs loosening and toss thoroughly through salad.
Serve with protein of choice and enjoy!
