Ingredients: 1 Cup Almonds 1 Cup Hazelnuts 1 C Cherries, pitted and coarsely chopped 3 T Almond butter, or any other preferred nut butter (Use tahini for nut free option- school lunch boxes!) 1 T 100% pure maple syrup or raw honey 1/2 tsp Cinnamon 1/4 tsp Cayenne pepper Pinch of salt Desiccated coconut for dusting Note: for those chocolate fans among us, swap out 1/4 C of ground nuts and add 1/4 C cacao powder for a choco hit Method: Grind the nuts together (food processor/thermomix/blender) until they resemble a bread crumb like consistency Add them to a mixing bowl with all other ingredients and massage thoroughly until the mixture forms into a dough (gloves are recommended!) Pinch away small amounts of the dough at a time and roll between palms to form little balls Roll in coconut and place in the fridge/freezer to set for 3 hours or more These will last 3 weeks in the fridge, and 3 months in the freezer

Made these today with the beautiful juicy cherries in the shops at the moment, delicious, what a special treat.
