Ingredients:
10 medjool dates, pitted and chopped 1 C sunflower seeds 1 C pumpkin seeds 1 C flaxseeds (aka linseeds) 1/2 C shredded coconut (and more for rolling the balls in afterwards if you like) 1/3 C cacao or carob 1 tsp cinnamon 1/4 C water Method: Combine all seeds and dates in a food processor until well combined, add remaining ingredients and mix until a dough like texture is formed. Using about 1 Tablespoon of the mixture at a time, roll it into little balls between your palms. Roll in coconut before leaving in the fridge for 30 minutes to set. These are best stored in the fridge, and will last around 3 weeks at their best. They freeze well for 3 months.
