2.5 C Almond flour
1/4 tsp Baking soda
1 tsp Cinnamon
1/4 tsp Cardamon
1/4 tsp Ground cloves
Pinch of Salt
1/2 C Coconut oil (melted)
1/4 C Honey or pure maple syrup
1 tsp Vanilla extract
Method:
In a large mixing bowl combine all of your dry ingredients
In a smaller bowl combine your wet ingredients, and whisk to combine
Fold the wet ingredients into the dry, mixing until thoroughly combined and then refrigerate for one hour - or until a firm dough consistency has been reached
Pre-heat your oven to 180 degrees
Roll out your dough between 2 pieces of baking paper, until about 1 centimetre thick
Cut with your chosen cookie cutter shape, and move them onto a baking sheet lined with baking paper
Bake for around 8 minutes, or until golden
Allow to cool before consuming, so they firm up slightly
NOTE: Due to the nature of coconut oil, this mixture softens quickly at room temperature. So once you have removed your mixture from the fridge, and you are ready to roll - work briskly :-)
