Ingredients:
2 C Almond meal aka almond flour
½ t Sea Salt
½ tsp Baking Soda
¼ C Arrowroot powder
1 tsp Cinnamon
¼ Coconut oil, melted
½ C Raw honey
1 Egg
1 medium Apple, diced
1 tsp Vanilla- optional
½ tsp grated Nutmeg
Method:
Preheat oven to 180°C
Combine all dry ingredients (except nutmeg) into bowl and stir well to incorporate
In a separate bowl combine coconut oil, honey, egg, and vanilla extract and stir to combine
Add this to the dry ingredients, add the apple and stir until just combined
Add to cupcake casings and sprinkle with the nutmeg
Bake for approximately 14 minutes.
