Ingredients:
1 T cold pressed olive oil
1/2 a small onion, diced
100g millet, rinsed
700g cauliflower, chopped
1 T fresh sage, or 1 tsp. dried sage
350ml water
pinch of salt
chopped parsley for garnish
Method:
In a medium heated sauce pan add olive oil and saute the onion until it just starts to brown
Add millet, cauliflower and sage and saute for one more minute
Add water and salt, and bring to the boil
Cover and reduce the heat to a gentle simmer and leave for 20 minutes
Mash with a potato masher, sprinkle with parsley and serve alongside your meal
