1 tsp coconut oil for cooking
2 eggs
1 T natural, full fat yoghurt (organic if possible)
1/2 tsp cumin
1/2 tsp turmeric
Salt and pepper to taste
paprika, parsley and extra yoghurt to garnish
Method:
Heat pan to medium/high and add coconut oil to coat
In a bowl combine eggs, cumin, turmeric, salt and yoghurt and whisk to combine
Add to the pan and fold until just set and remove from heat
Place on plate, adding a small dollop of yoghurt, a sprinkle of paprika and pepper and a spring of flat leaf parsley
