1/2 C medjool dates, pitted and chopped
1/2 C pecans, chopped
1/3 C shredded coconut
1/4 C ground flaxseeds (aka linseeds)
3 T psyllium husk
3 T good quality peanut butter (100% nuts, organic if possible other nut spreads can be substituted)
Method:
Combine all ingredients in food processor or thermomix
Take small pieces of the mixture and roll between your palms to create little balls
On a flat surface squish down lightly with a fork to resemble a cookie, you may need to work it with your hands a little to create a flat circular shape (don't panic if the mixture doesn't hold together firmly, as they set in the fridge it will)
Chill for 30 minutes before serving, and store them in the fridge
