Makes 2 large pancakes, or 8 small pikelets
Ingredients: 3 eggs Splash of milk of choice, I used almond 1 T coconut flour 1 T cacao or carob 1 tsp psyllium husk To serve: 100% pure maple syrup, almond spread and cinnamon (I also added a touch of NUIBELLA coconut chocolate spread) Method: Whisk eggs and milk in a bowl and add the dry ingredients, mixing until smooth. The mix will be thick. Add a small amount of olive oil or coconut oil to a medium heat pan, add a spoonful of mixture and when bubbles start to pop on the surface flip over and fry for only 15-30 seconds more Top with your desired goodies and serve
