1 C pumpkin seeds
1/2 C sunflower seeds
1/2 C walnuts
1/2 C basil leaves, chopped
1/2 C fresh parsley, chopped
1/2 C sundried tomatoes, soaked for one hour in warm water and then chopped
1/2 tsp dried oregano
2 garlic cloves, crushed
Juice of one lemon
2 T olive oil
Salt and Pepper to taste
Method:
Combine all ingredients in food processor/thermomix until combined but not complete mush (I LOVE texture, so I always briefly whizz things to reserve a few whole seeds and herbs visible in my creations...I believe this visual and textural experience enhances the flavour of food!)
Roll around a tablespoon at a time worth of mixture in between your palms, the mixture will make around 20
Roll the balls in seeds if you wish; such as flaxseeds, sesame seeds, poppy seeds and so on
Store in an airtight container, in the fridge until consumption
These are a great vegetarian protein option for clean and lean meals - eat them alongside a beautiful salad, have them in wraps or eat them on their own or with a dipping sauce for a yummy snack!
