1/2 a red cabbage, finely shredded
1 carrot, grated or julienned
1 red capsicum, diced
1/2 a bunch of mint
1/2 a bunch of coriander
1 small chilli, finely diced (optional)
Protein of choice - (in the picture I added a can of organic chickpeas for a hassle free option)
Dressing-
1 T cold pressed Olive oil
1 tsp sesame oil
1 lime, juiced
1/2 tsp tamari (soy sauce)
1/2 tsp honey
Method:
Combine your dressing ingredients in a small bowl and whisk
Add your salad ingredients to a large bowl, and top with your dressing, mix thoroughly to combine
I like to let it sit for 5-10 minutes before eating so the flavours really infuse
Serve alongside your chosen protein
This slaw will happily store in the fridge for 3-4 days
