Ingredients:
1 T EVOO or coconut oil 1 carrot, grated 4 spring onions or 1/2 a red onion, diced 500 grams turkey mince 200 grams of tempeh, grated 1 T tamari 1 chilli, chopped 2 teaspoons of cumin 1 teaspoon paprika 2 handfuls of greens of your choice (kale, water cress, spinach), chopped/shredded Ground pepper to taste Method: Add oil to a medium heated pan, add the carrot and onions and saute until just softened and fragrant. Remove from heat and add to a large mixing bowl with all other ingredients, with your hands thoroughly work the ingredients into each other (you may want to let it sit for a while for the onion/carrot to cool before beginning to mix it). Roll into balls and pat down softly to flatten on a lined tray that will fit into your fridge, leave in the fridge for 2 + hours to set (you can do this the night before, or the morning of cooking these for dinner...this step is important so they don't fall apart in the oven/pan). Oven bake these for 10 - 15 minutes each side, or until just golden. Alternatively pan fry them for 5 minutes each side in a little bit more oil. Enjoy with a fresh garden salad, in a whole grain burger bun or wrapped in a cost lettuce leaf with extra salad.
