WHAT - no meat?! Girl your crazy! I can almost hear the cries of despair now - but trust me, these meat free taco's will leave you happy-tummied, and guilt free! Ingredients: Filling:1 C walnuts 1/4 - 1/2 C tempeh (silken/medium/firm tofu would also be fine) 1 T tamari 1 T chia seeds 1 tsp olive oil 1 tsp cumin ¼ tsp ground coriander ¼ tsp chilli powder black pepper 1 avocado, diced 6 cos lettuce leaves, or ice berg lettuce leaves Toppings: Anything you desire, options could be; Diced tomatoes, Green chilli, Red or spring onions Coriander, Lemon juice, Shredded cabbage Method: Pulse all filling ingredients except avocado, lettuce leaves and topping, until it has a crumbly 'mince-like' texture. Place down the centre of the lettuce leaves. Dice your topping ingredients and place on top of the filling, garnishing it with the avocado. Optional extra to add your favourite sauces e.g guacamole, chilli sauce and so on
