2 T olive (extra oil to serve)
4 garlic cloves, chopped
1 onion, thinly sliced
3 cups peas, fresh or frozen and defrosted
1 lemon, zest and juice
1 handful of flat parsley, roughly chopped
The flesh of one avocado, roughly cubed
¼ C pumpkin seeds
Method:
Heat your oil in a medium heat pan and sauté the onion, garlic and peas for a few minutes, until the onion starts to brown slightly, set aside in a bowl.
To the bowl add the avocado, lemon zest/juice, parsley, pumpkin seeds and salt and pepper, using a fork roughly mash the mixture.
Drizzle over some olive oil, and serve.
This smash goes really well with white protein choices, including egg!
