2 small or 1 large zucchini
1 lemon, juiced
1 C basil leaves
1 avocado - quite ripe
Salt and pepper to taste
Water to loosen, if needed
Use a vegetable peeler, or julienne peeler to slice thinly into pasta, or spaghetti-like strips.
Combine all dressing ingredients in blender/food processor/thermomix and whizz to combine.
Toss through zucchini and serve.
